zuchini with raw xochimilco shrimp and their roe; served with mayonaise, salsa verde, 'water chile'
xochimilco shrimp broth, probably my favorite bite
avocado and escamoles (ant larvae) tartar with onion ash
grilled blue fin tuna with gastrique, turnip and eggplant puree
a giant morel (hard to tell by the photo, but it was about as long as the lip of my beer glass) stuffed with chanterelle with pea puree
turkey with recado negro fermented and charred vegetables
cactus sorbet with black salt
'berry chaos' (meringue, ice cream, powders, whole fruit, shattered frozen fruit, beet chip, clear jelly)
tea service; the waiter suggested the tomillo-estiva-menta-melissa-toronjil.
mamey panna cotta, sweet corn crumble, mamey seed ice cream
